At the moment I really need some structure in my life to help my poor head not spinning around. I've tried meal plans earlier in my life and I found them to be fun, easy and very helpful for eating varied, actually make meals and, use up produce in the fridge and also for saving money.
Right now I think it will help me to eat and eat nutritously as well. The funny thing about structure is that I find myself craving it and at the same time resisting it. Maybe I need to think about why that may be - but then again, maybe I don't? I certainly don't need more to rumble my brain. So for now I'm just focusing on the next weeks meal plan (well, really this week until sunday I think).
I have some fresh kale in a vase, some steemed kale in the fridge, a few eggs, and some pastured, organic beef straight from the farm and a tiny bit of smoked trout.
Tue: Scrambled eggs (steamed kale, trout and scallions) on toasted rye bread (assuming that bf's chili is HOT)
Wed: Cottage pie
Thur: Baked whole chicken with veg and salad
Fri: Soup with bacon bits (don't know which one yet)
Sat: Flank steak with veg and potatoes
Sun: Chicken pot pie
My bf doesn't like eggs when they are visible in foods so spanish tortilla and other egg based things are out when he's in ;) Which he is most of the days so I'll eat them for breakfast or lunch. Also I'll try to remember to soak my breakfast porridge over night and maybe add a greated apple. Leftover porridge is delicous stirred with an egg or two and then fried in butter. Yum!
